Opening a new door.

Hi! I'm Meghan -- thanks for visiting my blog! This is totally an experiment to expand my creativity and my cooking skills, so we'll see how this goes...

"FitFoodieEngineer" is what I've decided to name this blog, because that's what I am. I love fitness, I love healthy food (and I'm NOT afraid to eat it... sometimes in rather large quantities. I'm also not afraid to eat dark chocolate or slightly excessive amounts of nut butter, but I'll save more discussion on that for later), and I'm studying engineering. I'm actually a dual major with Mechanical Engineering and Design, Innovation & Society, so that's where this whole creative experiment piece comes in.

I eat healthy because it tastes good. I make a pretty mean vitamin-packed smoothie and can down 2lbs of plain Greek yogurt (Wegmans brand is the best, with Fage a close second) in less than 24 hours. I prefer a huge salad over a bowl of ice cream (although I will eat and enjoy good ice cream, like from Kilwin's in Michigan, Abbots in Rochester, and the Vermont Confectionery in Bennington, VT which I just recently discovered on a 74-ish mile bike ride). I eat veggies like a rabbit but I can eat meat like a man. Salmon is always my birthday meal and sushi makes my tummy very happy, except when I eat close to 50 pieces. Which I've done and didn't regret, execept when that satiated feeling kicked in. 

Anyhow, I've created this blog to challenge and satisfy myself in a number of ways:  1) I want to unleash the cooking ability that I inherited from my grandma... at least I hope I inherited her skills!  2) I like good food.  3) I like to burn calories in the gym and on the tennis courts so I need to replace those calories... because frankly, I like having a butt and toned muscles.  4) This is my first year not being on a meal plan at school and I finally have my own kitchen and my own grocery budget. I'm psyched.  5) I need a stress relief. I study too much. I also need to multi-task while I listen to the Game of Thrones audio books.  6) I want to find simple recipes and prep meals for the week. I don't want to be overwhelmed by cooking for myself while also being a full-time student who has panic attacks when she doesn't have enough time for the gym.  7) I don't care if anyone reads this, I'm doing it for me. It will be awesome others enjoy it though.  8) I want to see if cooking can expand my creativity skills. I think it can.  9) By creating a blog, I'm making a commitment. Commitments can be scary, but that's only when you're afraid to fail.

...That's a good list for now. I'm excited to get started.
